I found a recipe for soft Oreo cookies this morning and decided to try making them. They are so easy I decided I would add them on here in case someone else might like to try these quick cookies. (Quick is all I can handle these days)
 

Easy Homemade Oreo Cookies Recipe:
(Makes 18 cookies)
Ingredients:
Cookies:
1 (15.25 ounce) package of Devil’s Food cake mix
2 eggs
3/4 cup shortening

Frosting:
1/2 cup (1 stick) butter, softened
1/4 cup milk
2 teaspoons vanilla
4 cups powdered sugar (more or less depending on how thick/runny you like it)
Directions:
Preheat oven to 350 degrees. Mix together cake mix, eggs and shortening until well combined. The dough will be pretty thick. Roll dough into balls, making sure they are all similar in size. Place dough onto ungreased cookie sheet and bake for 8 minutes. Immediately transfer cookies to a cooking rack. Mix together butter, milk, vanilla and powdered sugar until smooth. Spread onto cooled cookies and sandwich together.

There you have it! I may try to take a picture of my cookies later but I’m too lazy to do it at the moment.They are a cross between a Oreo and a whoopee pie. The cookies are not light like whoopee pie cookies are but it’s the same idea.I made mine about half the size of a whoopee pie.
